
What You Need:
2 Large Potatoes
1 Can Vegetable Broth (or chicken if you prefer)
1 Cup Milk
1 Small Onion
1/2 Stick of Butter
6-8 Slices of Bacon
1 Package Shredded Cheese (cheddar works well)
Salt, Pepper, and Garlic Powder to taste
Get Cookin':
Peel your potatoes and rinse, then cut into cubes. Place into a pot with broth, cook on medium heat until tender. Season with salt and pepper. (It should begin to look like mashed potatoes.)
Cook the desired amount of bacon, set aside. Save a small amount of the grease. In a pan, cook the onion with a small amount of butter.
Once the potatoes are tender and broth is mostly dissolved, add in onion, bacon grease, and shredded cheese. The soup should be thick, add 1 cup of milk. You may add more milk to get to the consistency you like your soup. Add in butter and garlic powder to taste. Serve in bowls and add a little shredded cheese and bacon for garnish. (You can mix bacon crumbles into the soup as well.)
